Butchers Notes

You can’t get better steak than what we have at home”

For Lily, no steak quite lives up to the steak produced by her family. Grilled medium rare on the barbie; served with chips, salad and coleslaw, it’s a perfection that she just can’t find elsewhere, and one which her family have worked hard to achieve. Indeed, it’s no wonder that Lily’ greatest inspirations come from within her home, and that she’s offered her full support to her brother Henry in his latest development: Dry Aged Steak Co.

Launched after a meeting in the family kitchen, Dry Aged Steak Co, like the family butchers, A. Laverack & Son, is firmly rooted in the East Yorkshire home-town of Lily and her siblings, Holme-On-Spalding-Moor. Having grown up witnessing the hard work and passion of Yorkshire farmers there, Lily is a firm believer in the importance of using local produce. Indeed, to Lily, Yorkshire is a place of “real people, real produce, and a happy environment”. It’s no surprise, then, that she and Henry choose the best beef from local markets for their dry aged steaks.

Whilst A. Laverack & Son butchers has now expanded beyond the family home, with another store in Pocklington, Lily still views the people that she works with as her family, describing the “amazing bond” shared with staff. Supplying their dry aged steak from these very stores, with Dry Aged Steak Co, Lily and her brother hope to successfully deliver their personal Laverack touch and Yorkshire pride to homes all over the country.
